  2. Stir until the sugar is completely dissolved.

  3. Add the fish sauce and mix.

  4. Add 75 ml lime juice and the rice vinegar.

  5. Taste for balance; the sauce should be sweet, sour, salty, and light enough to sip in a small amount.

  6. Add the remaining lime juice gradually if more acidity is needed.

  7. Stir in the minced garlic, sliced chillies, and julienned carrot.

  8. Rest for 15 minutes so the aromatics infuse.
