Fine-Mesh Strainer

A fine-mesh strainer separates small solids from liquids and can also sift dry ingredients, rinse grains, and refine sauces or purées.

Best Uses

Custards, sauces, small batches of stock, tea, powdered sugar, flour, rinsed grains, seeds, and smooth purées.

What to Look For

  • Fine evenly tensioned mesh.
  • A rigid rim that does not distort.
  • A secure handle.
  • Hooks or supports that rest safely over bowls or pans.

Correct Use

Pour at a rate the mesh can handle. Use a ladle or flexible spatula to encourage thick mixtures through without damaging the screen.

Care & Maintenance

Rinse immediately before particles dry into the mesh and inspect for broken wires.

Common Mistakes

  • Forcing hard solids through delicate mesh.
  • Overfilling and spilling around the sides.
  • Leaving starch or egg residue to dry before washing.
