INGREDIENT KNOWLEDGE
Fish Sauce
Fish sauce is a fermented liquid seasoning with intense salinity, deep umami, and a characteristic marine aroma that becomes far more integrated when balanced with acid, sweetness, chilli, herbs, and cooked food.
What Is Fish Sauce?
Traditional fish sauce is made by fermenting fish—often small oily fish such as anchovies—with salt. Over time, proteins break down into flavourful amino acids and the liquid is drawn off, filtered, and sometimes blended.
Quality and Regional Styles
Vietnamese nước mắm, Thai nam pla, Filipino patis, and other Southeast Asian fish sauces differ in fish, salt, fermentation, sweetness, concentration, and blending. Higher-quality sauces often have a cleaner aroma and greater savoury depth rather than simple saltiness.
Storage
Fish sauce is salt-rich and stable, but aroma and colour still evolve with oxygen and heat. Store tightly closed and follow manufacturer guidance; refrigeration after opening can help preserve quality in some products and climates.
Cooking and Seasoning
Add fish sauce to curries, soups, stir-fries, marinades, braises, fried rice, and dipping sauces. Early additions melt into the background; late additions preserve more fermented aroma. Always taste before adding extra salt.
Pairings and Substitutions
Fish sauce pairs with lime, chilli, garlic, sugar, ginger, lemongrass, coconut milk, herbs, pork, chicken, seafood, and noodles. Soy sauce can provide salt and umami but changes aroma. Vegan fish-sauce alternatives often use seaweed, mushrooms, and fermented seasonings.
Common Mistakes
- Judging fish sauce only by smelling it straight from the bottle.
- Adding salt before accounting for its salinity.
- Using large amounts when the dish needs only background umami.
- Assuming all regional fish sauces have identical strength and sweetness.
Chef’s Notes
A few drops can fix a flat savoury dish without making it taste overtly of fish. Season incrementally and let it integrate before deciding whether more is needed.
