Method

  1. Prepare the dough. Combine flour, dry yeast and caster sugar. Mix in lukewarm milk, egg and optional vanilla. Knead 5 minutes until cohesive.

  2. Enrich with butter. Work in softened butter a little at a time, then add salt. Knead another 7–10 minutes until the dough is smooth, elastic and tacky but holds together.

  3. First prove. Cover and allow to rise in a warm, draft-free place for about 60–75 minutes until visibly puffed.

  4. Add pearl sugar. Fold in the pearl sugar gently without crushing the pieces. Divide into 10 portions, approximately 100 g each; rest 15–25 minutes.

  5. Preheat the iron. Preheat a suitable waffle iron according to its instructions, approximately 175–185°C where temperature is adjustable. Use minimal additional fat if the iron requires greasing.

  6. Cook and serve. Cook each dough portion about 3–5 minutes until well browned, the centers are cooked through and the sugar caramelizes. Carefully remove with heatproof tools; melted sugar is extremely hot. Cool briefly on a rack before serving.

Chef’s notes

  • Use true Belgian pearl sugar; granulated sugar does not provide the same texture.
  • Liège waffles use dough, not pourable batter.
  • Clean cooled caramel from the iron according to the manufacturer’s instructions to protect the coating.

Substitutions

  • If fresh yeast is preferred, replace 8 g instant yeast with about 20 g fresh yeast and dissolve it in the milk.
  • Cinnamon may replace vanilla for aroma.
  • Do not substitute coarse decorating sugar if it melts instantly in the iron.

Storage and Food Safety

Cool fully before packing. Refrigerate in a covered container and use within 2 days, or freeze individually for up to 1 month. Reheat in a toaster or oven until thoroughly hot; avoid letting surface sugar scorch.
