Butter

Butter is an emulsion of milk fat, water, and milk solids that brings richness, aroma, browning, tenderness, and structure to both savoury cooking and baking.

Common Types

Unsalted butter gives the cook full control of seasoning. Salted butter has salt added for flavour and keeping quality. Cultured butter is fermented before churning and tastes tangier and more complex. Clarified butter has much of the water and milk solids removed.

How Butter Behaves

Whole butter foams as water evaporates and milk solids brown at higher heat. Brown butter develops nutty aromas as those solids toast. Cold solid butter creates flaky pastry layers; softened butter traps air during creaming; melted butter gives a different crumb and texture.

Storage

Keep butter refrigerated and well wrapped because it readily absorbs surrounding odours. Freeze well-protected butter for longer storage. Discard butter with rancid, cheesy, or stale flavours inconsistent with its style.

Culinary Uses

Butter is used for sautéing, basting, pan sauces, compound butters, mashed potatoes, pastry, cakes, cookies, breads, hollandaise, beurre blanc, finishing vegetables, and enriching soups and purées.

Pairings and Substitutions

Butter pairs with garlic, herbs, lemon, cream, potatoes, mushrooms, seafood, meat, bread, chocolate, fruit, and sugar. Ghee offers a nuttier clarified alternative. Neutral or olive oil can replace butter in many cooking applications but lacks dairy solids and behaves differently in baking.

Common Mistakes

  • Using melted butter where a recipe depends on creaming or lamination.
  • Burning milk solids during high-heat cooking.
  • Using salted butter without adjusting recipe salt.
  • Leaving butter exposed to strong refrigerator odours.
