A cook-chill tank uses cold or chilled circulating water to remove heat rapidly from sealed food packages after cooking. It is part of a controlled production system in which cooking, packaging, chilling, storage, and reheating are managed as one validated process.
Where It Fits
Cook-chill systems are used in high-volume kitchens, hospitals, catering operations, commissaries, and other facilities that prepare food ahead under controlled conditions. The chilling tank does not create shelf life by itself; it supports the cooling stage of a documented food-safety system.
Water Circulation
Moving cold water transfers heat more effectively than stagnant water. Pumps or agitation keep chilled water moving around packages. Load bags so water can contact their surfaces rather than stacking them into a dense block that traps warm zones.
Bag Integrity
Inspect seals before and after chilling. Damaged packages can allow water into the food or food into the tank. Remove leaking packs immediately and follow the operation’s corrective cleaning and product-disposition procedure.
Cooling Verification
Monitor cooling according to the validated process and applicable local requirements. Product thickness, starting temperature, bag arrangement, water temperature, circulation, and batch size all influence cooling rate. Record time and temperature where required rather than relying on tank water temperature alone.
Loading Workflow
- Confirm packages are correctly sealed and identified.
- Prepare the tank at the required chilled condition.
- Load packages with enough separation for water movement.
- Start the defined cooling cycle.
- Verify product temperature through the approved method.
- Transfer chilled packages immediately into controlled refrigerated storage.
Water Hygiene
Use water quality and treatment appropriate to the system and local requirements. Food packages may carry external contamination from upstream handling, so tank sanitation, water management, and package hygiene should be part of the operation’s documented program.
Cleaning
Drain and clean the tank, baskets, pumps, screens, pipework, and accessible surfaces according to manufacturer and sanitation procedures. Leaking food packages require immediate attention because organic material can contaminate circulating water and hidden components.
Common Mistakes
- Packing bags too tightly for water circulation.
- Using tank-water temperature as the only evidence of product cooling.
- Ignoring small package leaks.
- Leaving chilled bags at room temperature before refrigerated storage.
- Treating cook-chill equipment as a substitute for a validated process.
Chef’s Note
Water needs to reach every package. If the tank is packed like a freezer drawer, the centre of the load can stay warm even while the water around it is cold.
