- 360 g aged basmati rice, washed and soaked for 20 minutes paid link
- 80 g date syrup (dibis) paid link
- 35 g sugar, optional depending on date syrup sweetness paid link
- 45 g ghee
- 0.2 g saffron threads
- 15 ml rose water
- 3 g ground cardamom or seeds from 6 green cardamom pods paid link
- 2 whole cloves
- 2 g fine salt paid link
- 70 ml warm water, divided
- 1,800 ml water for parboiling
Method
Infuse the aromatics. Crush saffron gently; place in 30 ml warm water with rose water, cardamom and cloves. Let stand for 10 minutes.
Parboil the rice. Drain the soaked rice. Bring 1,800 ml water and salt to a boil. Add rice and boil for 6–8 minutes until partly tender but still firm at the centre; drain thoroughly.
Prepare the sweet coating. Warm date syrup, optional sugar and remaining 40 ml warm water just until fluid. Gently fold through the drained rice with the saffron infusion.
Steam. Melt ghee in a heavy non-stick or well-seasoned saucepan. Layer the flavoured rice loosely over the ghee, cover tightly and cook on the lowest possible heat for 20–25 minutes. Do not stir once covered.
Serve. Rest covered for 5 minutes. Fluff rice and transfer to a warm platter. Break up any golden bottom crust and scatter it over the rice.
Beginner Technique Notes
- Date syrup brands differ in sweetness. Taste the warmed syrup before deciding whether to add sugar.
- Low, steady heat is essential: high heat burns the syrup before the rice is fully steamed.
- Muhammar is commonly eaten with savoury fried fish rather than treated only as dessert.
Substitutions
- Sugar may replace date syrup, giving a paler finish and different flavour.
- Butter can replace ghee, though its milk solids burn more easily.
- A small amount of orange blossom water can replace rose water as an adaptation.
Storage and Food Safety
Cooked rice requires prompt cooling. Spread leftovers into shallow containers, chill within 1 hour and refrigerate at 4°C or below. Use within 24 hours and reheat once until piping hot (at least 75°C).
