Bahraini Balaleet — Sweet Vermicelli with Saffron Omelet

2–4 minutes

Balaleet brings together sweet, saffron-scented vermicelli and a thin savory omelet. This sweet-savory pairing is served for breakfast across Gulf communities, including in Bahrain, particularly for festive family meals. The noodles should be lightly glazed, not submerged in syrup.

Ingredients

Equipment

Method

  1. Bloom saffron. Soak saffron in 40 ml warm water for 10 minutes, then stir in rose water.

  2. Cook the vermicelli. Bring 1,500 ml water to a boil. Add vermicelli and cook for 2–4 minutes until almost tender; drain promptly. Follow the timing on the noodle packet if different.

  3. Sweeten the noodles. Melt 25 g ghee in a wide pan over medium-low heat. Add noodles, sugar, cardamom, saffron infusion and 1 g salt. Toss for 3–4 minutes until glossy and the liquid is absorbed. Cover and keep warm.

  4. Make a thin omelet. Beat the eggs with remaining 2 g salt. Heat the remaining 10 g ghee and neutral oil in a non-stick pan. Pour in eggs to form a thin layer, then cook gently until just set but fully cooked; fold into a loose round.

  5. Plate the balaleet. Mound noodles on a platter, lay the omelet on top and serve warm.

Chef’s notes

  • Thin vermicelli cooks quickly; overcooking causes it to become mushy when finished in ghee.
  • The omelet is traditionally savory, which balances the sweet noodles.
  • Use saffron sparingly; a small quantity perfumes the dish without bitterness.

Substitutions

  • Butter can substitute for ghee at lower cooking temperature.
  • Rice vermicelli can be used for a wheat-free adaptation, but texture and cooking time differ.
  • Reduce sugar moderately if serving with other sweet foods, without changing the dish into savory noodles.

Storage and Food Safety

Chill noodles and omelet separately within 1 hour after cooking; refrigerate at 4°C or below. Use within 24 hours and reheat once to at least 75°C before combining.

Serving Suggestions

Fresh fruit and karak tea or unsweetened black tea.

Allergens

Wheat (gluten), eggs and milk (ghee). Rice vermicelli and oil alternatives need product-label checks.
