Bhuna khichuri is a fragrant Bangladeshi rice-and-lentil dish associated with monsoon meals and special family tables. Unlike a soupy khichdi, this version uses toasting and controlled liquid so that the finished grains remain tender with some definition.

Equipment
Method
-
Toast the dal. Dry-toast moong dal in a saucepan over medium-low heat for 5–7 minutes until lightly fragrant, stirring continuously. Rinse and drain.
-
Soften the aromatics. Heat ghee in a heavy pot. Cook onion until lightly golden, approximately 8 minutes. Add ginger, garlic, cardamom, cinnamon and bay leaves; stir for 1 minute.
-
Toast the rice and spices. Add turmeric, cumin, coriander, rinsed rice and dal. Stir carefully for 2–3 minutes to coat in the spiced fat.
-
Absorb the liquid. Pour in 950 ml hot water, add salt and chili. Bring to a boil, cover and reduce immediately to very low heat. Cook 18–22 minutes, until liquid is absorbed and the rice and dal are tender.
-
Rest. Turn off heat and leave covered for 10 minutes. Remove cinnamon and bay leaves, fluff very gently and serve.
Chef’s notes
- Toasting moong dal adds nuttiness and helps create a distinctive bhuna-style aroma.
- Stock quantity depends on rice age and pot seal. If grains remain firm, sprinkle with 30–50 ml hot water and continue briefly.
- The dish should be moist and tender but not soupy.
Substitutions
- Neutral oil may replace ghee for a dairy-free version.
- Fresh peas or chopped vegetables may be added; extra vegetables may require a slight water adjustment.
Storage and Food Safety
Rice dishes must be cooled promptly. Spread into shallow containers, chill within 1 hour and refrigerate at 4°C or below. Use within 24 hours and reheat once to at least 75°C.
