Saint Lucian Green Fig and Saltfish

Saint Lucia’s green banana and saltfish dish with peppers, onion and herbs.

Green fig and saltfish is widely identified with Saint Lucia. “Green fig” refers to green banana, which is boiled until tender and paired with seasoned salt cod.

Ingredients

  • 1,000 g green bananas
  • 400 g salted cod, soaked and drained
  • 200 g onion, sliced
  • 150 g bell pepper, sliced
  • 200 g tomatoes, chopped
  • 15 g garlic, chopped
  • 3 g thyme
  • 40 ml oil
  • 20 ml lime juice
  • Black pepper to taste

Method

  1. Boil green bananas in their skins until tender, then cool enough to handle, peel and slice.
  2. Poach soaked salt cod briefly, drain, remove bones and flake.
  3. Cook onion, pepper, garlic and thyme in oil until soft.
  4. Add tomato and saltfish and cook 5–7 minutes.
  5. Fold in sliced green banana, finish with lime and black pepper, and serve warm.

Chef Notes

Salt cod varies greatly in saltiness, so soak and taste before adding any extra salt.

Substitutions

Fresh white fish creates a milder dish but does not replace the characteristic flavour of saltfish.

Storage

Refrigerate for up to 2 days and reheat until thoroughly hot.
