INGREDIENT KNOWLEDGE
Bell Pepper
Bell peppers are sweet, crisp capsicums with no significant chilli heat. Their flavour becomes softer, sweeter, and more concentrated as they ripen from green toward red, yellow, or orange.
What Is a Bell Pepper?
Bell peppers are cultivars of Capsicum annuum. Green peppers are generally harvested before full ripeness, while red, yellow, and orange peppers are mature forms selected for different colours and flavour characteristics.
Flavor and Cooking Behaviour
Green peppers are grassy and slightly bitter. Fully coloured peppers are sweeter and fruitier. High heat blisters the skin and concentrates sweetness; slow cooking softens the flesh into a silky texture; raw peppers remain crisp and refreshing.
How to Choose and Store
Choose firm, glossy peppers that feel heavy, with tight skin and fresh stems. Avoid large soft patches, wrinkles, or wet decay. Refrigerate dry and whole; once cut, cover and refrigerate promptly.
Preparation and Cooking
Remove the stem, core, seeds, and pale inner ribs. Slice for stir-fries and fajitas, dice for sofrito and salads, or roast whole until blackened, then cover briefly and peel for a softer, smoky-sweet result. Avoid rinsing roasted peppers excessively because it washes away flavour.
Culinary Uses
Bell peppers appear in Spanish and Latin American sofritos, Italian peperonata, Balkan dishes, Chinese stir-fries, Filipino stews, Mediterranean salads, Middle Eastern roasted preparations, stuffed peppers, sauces, relishes, and grilled dishes.
Pairings and Substitutions
They pair with tomato, onion, garlic, olive oil, vinegar, chilli, paprika, beef, chicken, eggs, cheese, rice, and herbs. Other sweet peppers are the closest substitutes; poblano can work when a mild chilli character is acceptable.
Common Mistakes
- Assuming green and red peppers taste the same.
- Overcrowding the pan and steaming instead of charring.
- Rinsing roasted peppers under running water and losing flavour.
- Leaving tough pale ribs in delicate preparations.
Chef’s Notes
Colour is not only visual. Green pepper brings bitterness and freshness; ripe coloured peppers bring sweetness. Choose the stage that serves the dish rather than treating them as interchangeable decoration.
