Ingredients

Preparation Overview
Rinse lentils until the water is mostly clear. Use fine köftelik bulgur, not coarse pilaf bulgur. Chop onion, spring onion, and parsley very finely but keep the fresh herbs separate. Wash and dry lettuce leaves and prepare a large tray for cooling and shaping.
Method
Cook the lentils. Combine lentils, water, and salt, bring to a boil, and simmer uncovered for 18 to 22 minutes until the lentils collapse and only a little liquid remains.
Absorb with bulgur. Remove from the heat, stir in fine bulgur, cover, and leave for 20 minutes until the grain swells.
Fry the onions. Heat olive oil and cook diced onions for 10 minutes until soft and lightly golden.
Add the pastes and spices. Stir in tomato paste, red pepper paste, cumin, pul biber, and black pepper; fry for 2 minutes.
Combine the mixture. Fold the hot onion mixture into the lentil-bulgur base until evenly coloured.
Cool safely. Spread on a large tray and leave for about 25 minutes until cool enough to handle but not dry.
Add fresh flavours. Knead in spring onion, parsley, lemon juice, and pomegranate molasses, then adjust salt and acidity.
Shape the köfte. With damp hands, squeeze portions into short oblongs so finger impressions remain along the surface.
Serve. Arrange each piece in a lettuce leaf and offer lemon wedges, pickles, and extra herbs.
