Ingredients
Quantities change with servings; cooking times stay the same.
Method
Heat the oil in a heavy pot and soften onion and garlic without browning.
Add breadfruit and water, cover and simmer 15 minutes.
Add coconut milk and salt and continue simmering gently until the breadfruit is fully tender, about 15–20 minutes.
Mash a few pieces against the side of the pot to thicken the broth.
Adjust seasoning and serve hot.
Chef’s notes
Use mature but firm breadfruit rather than fully ripe sweet fruit. Keep coconut milk at a gentle simmer so it stays smooth.
Substitutions
Taro or cassava can replace breadfruit, although the flavor will change and both must be cooked fully until tender.
Serve with
Grilled fish or leafy greens
Storage
Refrigerate for up to 2 days. Reheat gently with a little water or coconut milk.
