Ingredients
- 800 g beef chuck, cubed
- 220 g unsweetened peanut butter
- 60 g tomato paste
- 300 g tomatoes, chopped
- 200 g onion, chopped
- 300 g sweet potato, cubed
- 250 g cabbage, cut into chunks
- 1 small chilli, optional
- 1.2 litres water or stock
- 30 ml neutral oil paid link
- 9 g salt paid link
Method
Brown beef lightly in oil and remove.
Cook onion, tomato paste and tomatoes until reduced and fragrant.
Return beef, add water or stock and simmer 35 minutes.
Whisk peanut butter with hot broth until smooth, then stir it into the pot with sweet potato, cabbage and chilli.
Simmer 25–30 minutes, stirring often, until the beef and vegetables are tender and the sauce is thick.
Beginner Technique Notes
Peanut sauces scorch easily, so use moderate heat and stir regularly once the groundnuts are added.
Substitutions
Lamb or chicken can replace beef. Pumpkin can replace sweet potato.
Storage
Refrigerate for up to 3 days. Reheat gently, adding water if the sauce has thickened.
