Ingredients
- 700 g beef, cubed
- 220 g unsweetened peanut butter
- 300 g tomatoes, chopped
- 60 g tomato paste
- 200 g onion, chopped
- 300 g sweet potato, cubed
- 250 g cabbage, cut into chunks
- 1 small chilli, optional
- 1.1 litres water or stock
- 30 ml oil
- 9 g salt
Method
- Brown beef in oil and remove.
- Cook onion, tomato paste and tomatoes until reduced.
- Return beef, add water or stock and simmer 30 minutes.
- Whisk peanut butter with hot liquid until smooth, then add with sweet potato, cabbage and chilli.
- Simmer until beef and vegetables are tender and the sauce is thick.
Chef Notes
Keep the heat moderate and stir often after adding groundnuts to prevent sticking.
Substitutions
Chicken can replace beef. Pumpkin can replace sweet potato.
Storage
Refrigerate for up to 3 days. Reheat gently with a little water if needed.
