Method

  1. Mix the dough. Combine flour, sugar, yeast and salt. Add lukewarm water and the 25 ml oil; mix for 5 minutes until a soft, tacky dough forms. Add a little more water only if too stiff.

  2. Allow to rise. Cover and leave in a warm area for about 60–90 minutes until doubled in volume.

  3. Heat oil safely. Use a deep heavy pot with plenty of headspace. Heat frying oil to approximately 170–175°C and keep water away from the pot.

  4. Portion carefully. With lightly oiled hands or two spoons, divide dough into about 12 equal portions. Lower gently into the hot oil, working in small batches.

  5. Fry evenly. Cook for around 3–4 minutes per side, turning to color all surfaces, until puffed, golden and fully cooked inside. Adjust heat so crust does not burn before center cooks.

  6. Drain and serve. Transfer to a rack or paper to drain and serve warm, plain or with savory fillings.

Chef’s notes

  • The dough should be soft and slightly sticky, not dry and stiff.
  • Correct oil temperature matters: too cool absorbs oil; too hot browns outside before the middle cooks.
  • Magwinya belongs to a wider Southern African fried-bread tradition; names and dough recipes vary.

Substitutions

  • Fresh yeast may replace instant yeast at approximately 20 g per 8 g dry yeast.
  • Use water rather than milk for the common simple dough style.
  • A little cinnamon can be added for a nontraditional sweet variation.

Storage and Food Safety

Best eaten the day made. Cool fully, refrigerate and use within 2 days or freeze for up to 1 month. Reheat in the oven until thoroughly hot. Do not hold cooked fillings at room temperature.

Serve with

Hot with tea, or filled with cooked mince or a savory relish

Allergens
