Ingredients

Equipment

Method

  1. Season and lightly flour the veal. Brown briefly in batches in 30 ml oil; transfer to a plate.

  2. Soften onion, carrot, celery and half the garlic in the pan for 10 minutes. Add tomato and cook for 5 minutes. Pour in stock; add bay, cinnamon, clove and veal.

  3. Cover partly and simmer gently for 35 minutes. Meanwhile, brown the mushrooms in the remaining oil and add them to the casserole.

  4. Pound the almonds, toast, parsley and remaining garlic into a coarse paste. Stir in and simmer for 20–30 minutes more, until the veal is tender and the sauce coats a spoon. Add stock as needed. Remove whole spices and check seasoning.

Chef’s notes

Ask the butcher to slice the veal thinly across the grain. A hard boil can make the slices tough.

Tips and variations

This version leaves the vegetables in the sauce and specifies cultivated mushrooms. Do not use unidentified foraged mushrooms.

Serve with

Spoon the sauce over the veal and serve with potatoes or bread.

Storage

Refrigerate promptly at 4°C or below and use within 2 days. Reheat gently to 74°C, adding stock if needed. Refrigerate perishable food within 2 hours, or 1 hour when the surroundings exceed 32°C.

Nutrition per serving (estimated)

Nutrition has not been calculated. Values depend on the ingredients and serving size.

Allergens

Contains wheat/gluten, almonds and celery. Check the stock label.

Questions

Can I make it ahead? Yes. Cool and refrigerate promptly, then reheat thoroughly.

Can I use beef? Thin beef braising slices are a variation and may need longer cooking.

Sources and recipe context

Kitchen testing confirmed by Sixto Carreon on 3 November 2026. This is an editorial adaptation. Uses a smaller batch, cultivated mushrooms and an unstrained vegetable sauce; the source’s English ingredient list contains inconsistencies, so quantities here are editorial specifications.
