Someone asked me where to find the best laksa in Singapore. The obvious answers usually point to familiar places: Katong, a well-known hawker centre, an old-school coffee shop, or perhaps one of the city’s celebrated restaurants.
Mine is different.
The best bowl of laksa I have had in Singapore was not in Katong. It was not in a hotel restaurant, and it was not at Lau Pa Sat. I found it at Changi Airport, inside Plaza Premium Lounge.

That may sound like an unlikely choice, especially in a city where laksa carries so much history, identity and regional pride. But this is not an attempt to make a sensational claim or manufacture a newsworthy headline. It is simply an honest assessment of a bowl that has consistently left an impression on me.
What stood out was the balance
The broth had the richness I look for in a good laksa, with coconut creaminess that did not overwhelm the spices. There was enough heat to give the soup character while keeping the bowl approachable. More importantly, the flavours felt composed rather than aggressive. Nothing seemed to dominate unnecessarily.
A good laksa should feel generous, comforting and deeply satisfying. This one did exactly that.
Perhaps the biggest surprise is the setting. Airport lounges are rarely where people expect to discover memorable local food. The expectation is usually convenience: something warm before a flight, a quick meal during a layover, or simply something better than eating at the gate.
But every now and then, a dish rises above the setting in which it is served. That is what happened here.
A personal choice, not a definitive ranking
Singapore has no shortage of excellent laksa, and choosing a single “best” version will always be subjective. Katong laksa has its history and loyal following, while hawker stalls across the island offer interpretations shaped by their own recipes and traditions.
I am not suggesting that one bowl should erase any of that. I am simply saying that, based on my own experience, the laksa at Plaza Premium Lounge at Changi Airport deserves far more attention than I expected it to.
Sometimes the best food discoveries do not happen where you expect them to. Sometimes they happen just before boarding a flight.
And for me, one of the most satisfying bowls of laksa in Singapore happens to be found at the airport.
