Uruguayan Chivito — Steak Sandwich

Uruguay’s layered steak sandwich with ham, mozzarella, egg, lettuce and tomato.

The chivito is one of Uruguay’s most recognisable casual dishes. Despite its name, the classic sandwich uses thin beef steak rather than goat, then layers it with ham, cheese and fresh garnishes.

Ingredients

  • 4 thin beef steaks, about 120 g each
  • 4 crusty sandwich rolls
  • 120 g sliced ham
  • 160 g mozzarella
  • 4 eggs
  • 160 g tomato, sliced
  • 80 g lettuce
  • 80 g mayonnaise
  • 20 ml oil
  • 6 g salt
  • 2 g black pepper

Method

  1. Season steaks and cook quickly in a hot pan until done to preference.
  2. Top each steak with ham and mozzarella and let the cheese melt.
  3. Fry eggs, keeping the yolks to your preferred doneness.
  4. Toast the rolls lightly and spread with mayonnaise.
  5. Layer lettuce, tomato, steak, ham, cheese and egg and serve immediately.

Chef Notes

Use thin tender steak and cook over high heat so it stays juicy. Assemble only when ready to eat.

Substitutions

Chicken can be used in a variation, but beef is characteristic of the classic chivito.

Storage

Store cooked components separately for up to 2 days and assemble fresh.
