Tajik Qurutob — Flatbread with Qurut, Onion and Herbs

A Tajik communal dish of torn flatbread soaked with tangy qurut sauce and topped with onions, tomatoes and herbs.

Qurutob is one of Tajikistan’s most distinctive dishes. Fatir flatbread is torn into pieces and moistened with a salty, tangy sauce made from qurut, then finished with fried onion and fresh vegetables.

Ingredients

  • 400 g fatir or sturdy flatbread, torn into pieces
  • 120 g qurut, crumbled
  • 350 ml warm water
  • 250 g onions, thinly sliced
  • 60 ml sunflower oil
  • 250 g tomatoes, chopped
  • 180 g cucumber, chopped
  • 30 g mixed coriander, dill and mint
  • Black pepper to taste

Method

  1. Soften or dissolve qurut in warm water until it forms a pourable, tangy sauce.
  2. Fry sliced onions in sunflower oil until deeply golden.
  3. Arrange torn flatbread on a wide serving platter and spoon over enough qurut sauce to soften it.
  4. Add the fried onions with some of their oil.
  5. Top with tomato, cucumber, herbs and black pepper and serve immediately.

Chef Notes

Qurut is naturally salty, so taste before adding any extra salt. Serve as soon as the bread is dressed so it softens without becoming completely mushy.

Substitutions

If qurut is unavailable, a salted strained-yoghurt sauce can approximate the tang, but it should be labelled as an adaptation.

Storage

Prepare components ahead if needed, but assemble only when ready to eat. Refrigerate dairy sauce and vegetables separately.
