Preparation Overview
Clean mushrooms with a brush or damp cloth and keep them dry. Tear or slice them into generous pieces so they retain texture. Beat the eggs only until combined. Jamón supplies considerable salt, so season after tasting. Prepare the salad before the eggs because revuelto should go straight to the table.
Method
Prepare the salad. Toss rocket and tomatoes with sherry vinegar and 25 ml olive oil, then set aside without salting.
Beat the eggs. Whisk the eggs just until yolks and whites combine; do not incorporate excessive air.
Fragrance the oil. Heat 30 ml olive oil in a wide skillet over medium heat. Cook the spring garlic, sliced garlic, and cayenne for 90 seconds, then remove them before the chilli darkens.
Crisp the jamón lightly. Add the jamón to the same skillet and cook for 1 minute. Lift it out and reserve.
Sauté the mushrooms. Increase to medium-high, add the remaining 30 ml oil and the mushrooms, and cook in two batches if needed for 7 to 9 minutes until browned and their liquid has evaporated.
Return the flavourings. Add the jamón and garlic mixture to the mushrooms and toss for 30 seconds.
Add the eggs off the heat. Pull the skillet from the burner, pour in the eggs, and stir continuously with a flexible spatula.
Finish gently. Return the pan to low heat for 30-second intervals, stirring between each, until glossy soft curds form.
Season and serve. Fold in parsley and black pepper, taste before adding salt, and serve immediately with the rocket and tomato salad.
