Hollandaise
Hollandaise is a warm emulsion of egg yolk, butter, and acid. Its central challenge is controlling enough heat to thicken yolks without scrambling them while adding fat gradually enough to maintain the emulsion.
Why It Works
Whisked yolk proteins thicken with gentle heat and provide emulsifiers that keep butterfat dispersed through the water phase.
Method
- Whisk yolks with water and acid over gentle heat to create a light sabayon.
- Remove or reduce heat as the yolks thicken.
- Add warm clarified or melted butter slowly while whisking.
- Maintain a smooth fluid consistency with small additions of warm water if needed.
- Season with salt, lemon, cayenne, or other finishing flavours.
Common Mistakes
- Heating yolks too aggressively.
- Adding butter faster than the emulsion can absorb it.
- Holding the finished sauce too hot.
- Allowing it to become so thick that it loses enough water to remain stable.
Professional Application
Used for eggs Benedict, asparagus, fish, vegetables, and derivative sauces such as béarnaise.
Chef’s Notes
Temperature and water are the two rescue tools. Many hollandaise problems are solved by cooling slightly and whisking in a teaspoon of warm water.
