Fermentation
Fermentation uses controlled microorganisms to transform sugars and other food components into acids, gases, alcohol, and complex flavour compounds.
Why It Works
Selected or naturally present microorganisms grow under conditions that favour desirable activity. Salt, temperature, oxygen, acidity, time, and sanitation determine which organisms dominate.

- Use a tested process appropriate to the specific ferment.
- Measure salt or inoculum accurately where required.
- Keep vessels and tools clean.
- Maintain the temperature range suited to the culture.
- Keep foods submerged when the method requires anaerobic brining.
- Observe acidity, aroma, gas, texture, and any validated safety measurements.
Food Safety
Fermentation is not simply leaving food at room temperature. Meat, fish, dairy, low-acid vegetables, and sealed foods can present serious hazards when processes are improvised. Use validated formulations and food-safety guidance for the exact product.
