Emulsification: Combining Fat and Water into Stable Sauces

Emulsification

Emulsification disperses tiny droplets of one liquid—usually fat—through another liquid that normally would not mix with it.

Why It Works

Mechanical agitation breaks fat into small droplets while emulsifiers such as egg yolk, mustard, proteins, or natural starches help keep those droplets separated.

Method

  1. Start with compatible temperatures where the recipe requires them.
  2. Combine the water phase and emulsifier.
  3. Add fat gradually while whisking or blending.
  4. Maintain enough water phase for the droplets to disperse.
  5. Adjust thickness with small amounts of water, acid, or fat as needed.

Common Mistakes

  • Adding fat too quickly at the beginning.
  • Letting a butter emulsion become too hot.
  • Trying to fix an overly thick emulsion with more oil.
  • Ignoring ingredient temperature.

The principle drives mayonnaise, hollandaise, vinaigrettes, beurre blanc, pan sauces, dressings, and many dairy and plant-based sauces.

When an emulsion looks greasy, ask whether it needs more agitation, more water phase, lower heat, or slower fat addition before discarding it.
