Custard Setting

Custards use egg proteins to thicken or set milk, cream, or other liquids. Gentle heat determines whether the result is silky or curdled.

Why It Works

Heat unfolds egg proteins and links them into a network that traps liquid. Excessive heat tightens that network too strongly and squeezes out moisture.

Method

  1. Combine eggs and liquid without excessive foaming unless desired.
  2. Temper hot liquid into eggs gradually for stirred custards.
  3. Cook over gentle heat while stirring, or bake in a water bath for even heat.
  4. Stop when the custard reaches the texture required; carryover heat continues cooking.
  5. Strain when an especially smooth finish is needed.

Good Cues

Stirred custard coats a spoon smoothly; baked custard has set edges with a controlled gentle movement at the centre rather than bubbling.

Common Mistakes

  • Boiling egg custard.
  • Using an excessively hot water bath.
  • Ignoring carryover cooking.
  • Whisking so much air into crème brûlée or similar custards that the surface becomes foamy.

Used for crème anglaise, pastry cream systems, crème brûlée, flan, quiche, ice-cream bases, curds, and savoury custards.

Chef’s Notes

Egg proteins do not need dramatic heat to set. The smoother the custard you want, the more carefully you should control temperature.
