Caul Fat Wrapping: Using Lace Fat to Hold and Enrich Preparations

Caul fat is the thin, lacy membrane of fat surrounding certain internal organs. In cooking it can be wrapped around forcemeats, lean meats and shaped preparations.

Rinse and prepare caul fat according to its condition, spread it gently without tearing, wrap the food in a thin even layer and trim excess. Keep it chilled until cooking.
