Mix flour and water until no significant dry flour remains, cover, and rest for the period specified by the formula. Salt, yeast or preferment handling varies by method.
Why It Works
Hydration allows gluten-forming proteins to absorb water and lets endogenous enzymes begin acting on dough components. The rest can make later dough development more efficient.
