INGREDIENT KNOWLEDGE
Sesame Oil
Sesame oil ranges from pale, relatively mild cooking oil to dark toasted oil with an intense nutty aroma. Knowing which type you have is essential because they serve very different purposes.
Main Types
Untoasted sesame oil is light in colour and can be used as a general cooking oil in cuisines where its flavour fits. Toasted sesame oil is darker and strongly aromatic, usually used in smaller quantities as seasoning or finishing oil rather than as the primary deep-frying fat.
Flavor and Selection
Toasted sesame oil should smell roasted, nutty, and clean, not rancid or paint-like. Choose packaging that protects it from light and buy a practical size because aromatic oils lose freshness once opened.
Storage
Keep sesame oil tightly closed, cool, and dark. Refrigeration can help preserve some aromatic oils after opening, depending on product guidance and climate. Discard oil when roasted aroma is replaced by stale or rancid flavours.
Culinary Uses
Toasted sesame oil seasons Korean banchan and marinades, Chinese cold dishes and sauces, Japanese dressings, noodles, dumpling dips, soups, stir-fries, and rice bowls. A few drops near the end often contribute more aroma than a large amount cooked for a long time.
Pairings and Substitutions
Sesame oil pairs with soy sauce, rice vinegar, garlic, ginger, scallion, chilli, tofu, cucumber, spinach, noodles, beef, and mushrooms. Neutral oil can replace cooking function but not aroma. Tahini or toasted sesame seeds can contribute sesame flavour in a different texture.
Common Mistakes
- Using toasted sesame oil as if it were a neutral frying oil.
- Adding so much that the dish tastes only of sesame.
- Keeping an opened bottle for years.
- Failing to distinguish toasted from untoasted oil.
Chef’s Notes
Treat toasted sesame oil almost like a liquid spice. Add it with intention and often near the end so its roasted aroma stays clear.
