Gochujang
Gochujang is a Korean fermented chilli paste combining heat, sweetness, salt, grain richness, and deep savoury fermentation. It is more complex than a simple chilli sauce.
What Is Gochujang?
Traditional gochujang is made from Korean red chilli powder, fermented soybean components, grain or rice, salt, and fermentation. Modern commercial formulas vary in sweetness, chilli level, texture, and additives.
Flavor and Selection
Gochujang is spicy but also sweet, salty, earthy, and fermented. Heat grades vary, so taste the product before deciding quantity. Choose according to desired sweetness and chilli intensity rather than assuming all red tubs are equivalent.
Storage
Refrigerate after opening according to manufacturer guidance, keep the surface clean, and use clean dry utensils. Darkening over time can occur, but discard paste showing spoilage inconsistent with normal fermentation.
Cooking with Gochujang
Dilute the thick paste with water, stock, soy sauce, vinegar, sesame oil, or other liquids for marinades and sauces. It can burn because of its sugars, so control direct heat. Use in stews, bibimbap sauces, marinades, glazes, fried dishes, noodles, vegetables, and dipping sauces.
Pairings and Substitutions
Gochujang pairs with soy sauce, sesame oil, garlic, ginger, rice vinegar, scallion, pork, beef, chicken, tofu, mushrooms, and cabbage. A blend of chilli paste, miso, sweetness, and seasoning can approximate some functions but will not reproduce authentic fermentation.
Common Mistakes
- Treating gochujang as plain chilli paste.
- Adding extra sugar and salt before tasting the paste.
- Burning sugary gochujang glazes over uncontrolled heat.
- Using too much and losing balance between heat, sweetness, and fermentation.
Chef’s Notes
Build a gochujang sauce around balance. The paste already supplies several seasoning dimensions, so acid, dilution, sesame, and aromatics often matter more than adding more sugar or salt.
