Preparation and Cooking

Crumble feta over salads and grains, slice it for mezze, mash into dips, bake whole with vegetables, fold into pastries, or whip with yogurt or cream cheese. Feta softens when heated but does not melt into a smooth pool like many high-moisture cheeses.

Feta pairs with tomato, cucumber, olives, lemon, oregano, mint, watermelon, spinach, eggplant, peppers, honey, lamb, and olive oil. Other brined white cheeses are the closest substitutes. Goat cheese offers tang but usually has a different creamy texture.
