Tortilla Press
A tortilla press flattens portions of masa into thin, even rounds for tortillas and related flatbreads.
Best Uses
Corn tortillas, masa-based flatbreads, tostada bases, and selected pressed dough preparations.
What to Look For
- Rigid cast construction.
- Even hinge pressure.
- Plate size suited to intended tortillas.
- Stable handle and base.
Correct Use
Portion masa consistently, use liners to prevent sticking, press gently rather than forcing the handle, and adjust dough hydration when edges crack.
Common Mistakes
- Using dough that is too dry.
- Overpressing and creating very thin weak edges.
- Skipping liners and damaging the tortilla during release.
Chef’s Notes
The press creates shape; good tortilla texture still depends on masa hydration and immediate cooking.
