Rice Cooker
A rice cooker automates controlled heating and shutoff for rice, providing repeatable results with minimal active attention and, on many models, a keep-warm function for service.
Best Uses
White rice, jasmine rice, short-grain rice, brown rice with appropriate programs, and high-volume rice production on commercial units.
What to Look For
- Capacity matched to normal production.
- A removable easy-clean inner pot.
- Programs appropriate to the rice styles used.
- A keep-warm system that maintains quality rather than aggressively drying rice.
Correct Use
Measure rice and water consistently, wash or soak according to the rice style, keep the exterior of the inner pot dry before placing it in the cooker, and allow a short rest after cooking when the rice benefits from moisture redistribution.
Common Mistakes
- Using one water ratio for every rice variety.
- Overloading above rated capacity.
- Holding rice for excessive periods until texture deteriorates.
Chef’s Notes
The rice cooker standardises heat; the chef still controls rice variety, washing, soaking, water ratio, resting, and holding time.
