Potato Ricer
A potato ricer presses cooked potato or other soft foods through small holes, creating fine separate particles without the aggressive shear of a blender or food processor.
Best Uses
Mashed potatoes, gnocchi, potato croquettes, some root-vegetable purées, and preparations where a light lump-free texture is desired.
What to Look For
- Strong handles with comfortable leverage.
- A basket that cleans easily.
- Interchangeable plates if multiple textures are useful.
- Capacity appropriate to the batch.
Correct Use
Rice potatoes while hot and well drained. Work in manageable loads and mix with fat or liquid only as much as necessary after ricing.
Common Mistakes
- Overfilling the basket.
- Using undercooked firm potatoes.
- Processing potatoes in a high-speed blender and creating gluey texture when a ricer would be more suitable.
