Planetary Mixer
A commercial planetary mixer moves its attachment around the bowl while rotating on its own axis, providing broad mixing coverage for dough, batters, creams, mashed preparations, and production-scale recipes.

Flat beaters handle many general mixtures, wire whips aerate, and dough hooks develop yeast dough. Commercial machines may support additional attachments.
What to Look For
- Bowl capacity appropriate to production.
- Rated dough capacity rather than bowl litres alone.
- Strong transmission and stable floor or bench mounting.
- Proper bowl guards and safety interlocks.
Correct Use
Use the specified attachment and speed, keep guards in place, do not reach into a moving bowl, and stop the machine before scraping or making manual adjustments.
Common Mistakes
- Overloading heavy dough.
- Using high speed with a dough hook against manufacturer guidance.
- Defeating safety guards to save time.
- Assuming maximum bowl volume equals maximum safe dough load.
Chef’s Notes
Commercial mixers are sized by workload as much as volume. Dense dough places very different demand on a machine than whipped cream.
