Pasta Machine: Rolling and Cutting Fresh Pasta Evenly

EQUIPMENT KNOWLEDGE · PREPARATION TOOLS

Pasta Machine

A pasta machine passes dough through adjustable rollers to create even sheets and, with cutters, uniform noodles.

Best Uses

Lasagne sheets, tagliatelle, fettuccine, ravioli sheets, filled pasta, laminated noodle dough, and other rolled fresh pasta.

What to Look For

  • Rigid rollers that remain parallel.
  • Useful incremental thickness settings.
  • A secure bench clamp or stable motor attachment.
  • Cutters appropriate to the pasta styles being produced.

Correct Use

Develop and rest the dough first, flatten it enough to enter the widest setting, then reduce thickness progressively rather than jumping immediately to a very narrow setting.

Care & Maintenance

Remove dry flour and dough with a brush according to manufacturer instructions. Many manual roller machines should not be immersed in water.

Common Mistakes

  • Feeding sticky wet dough through the rollers.
  • Skipping multiple thickness settings.
  • Rolling sheets so long that they become difficult to manage.

Chef’s Notes

The machine creates thickness consistency; dough hydration, gluten development, and resting determine whether the sheet passes cleanly.
