Mandoline Slicer
A mandoline holds a fixed blade beneath a sliding food path to produce fast, repeatable slices at controlled thickness.
Best Uses
Potato chips, gratins, cucumber, radish, cabbage, onions, vegetable ribbons, julienne, and repetitive garnish preparation.
What to Look For
- A rigid frame and sharp blade.
- Secure thickness adjustment.
- A stable base or nonslip support.
- A functional hand guard and compatible cut-resistant protection.
Safe Use
A mandoline blade is exposed and extremely efficient. Use the manufacturer’s guard whenever practical, keep fingertips away from the blade path, and stop before the ingredient becomes too small to control safely.
Care & Maintenance
Clean with the blade facing away from the hand, dry promptly, and store blade components protected. Replace or sharpen blades when slices begin to tear.
Common Mistakes
- Working quickly without a guard near the end of the ingredient.
- Applying uneven pressure and producing tapered slices.
- Using a dull blade that requires excessive force.
Chef’s Notes
The mandoline earns its place through consistency. Speed is secondary to uniform thickness and disciplined hand positioning.
