Gnocchi Board: Forming Ridges for Sauce-Holding Dumplings

A gnocchi board is a ridged hand tool used to shape gnocchi and similar dumplings, creating grooves that increase surface texture and help sauce cling.

Selection and Construction

Choose a board with clean, evenly formed ridges and a comfortable angle or handle. Wood is traditional, but food-safe synthetic versions are also available.

Professional Use

Lightly flour the board only as needed. Roll each portion down the ridges with controlled pressure, creating grooves outside and a small hollow inside without compressing the dough into a dense piece.

Cleaning, Safety, and Storage

Clean the tool promptly after use according to its material and the manufacturer’s instructions. Dry thoroughly before storage. Inspect cutting edges, joints, handles and food-contact surfaces regularly and remove damaged equipment from service.

Chef’s Note

Good equipment improves repeatability only when the tool suits the task. Prioritize control, sanitation, durability and the quality of the finished food over novelty.
