What trussing poultry means
Trussing is the technique of tying a whole bird into a compact, stable shape before cooking. The legs are secured close to the body, the wing tips are tucked or restrained, and the breast skin is kept smooth and protected. In professional kitchens, the purpose is not decoration alone: trussing creates a repeatable shape for roasting, rotisserie work, carving, portion control, and presentation.
It is most useful for whole chicken, poussin, guinea fowl, duck, turkey and other birds that will be roasted or cooked on a spit. The technique is different from spatchcocking, where the bird is deliberately flattened to increase exposed surface area and speed cooking.

Use plain food-safe cotton butcher’s twine. Avoid synthetic string, coated household cord, dental floss, rubber bands or any material not intended for hot food contact.
Step-by-step method: classic compact truss
1. Prepare the bird
Remove giblets if present. Trim loose excess fat around the cavity and pat the exterior dry. Season according to the recipe. If using cavity aromatics, add them immediately before tying rather than holding a filled raw bird for an extended period.
2. Tuck the wings
Fold the wing tips behind the upper back or tuck them securely under the body. This protects the tips from excessive browning and keeps them from projecting away from the roast.
3. Position the twine
Cut a generous length of butcher’s twine. Center it beneath the tail end of the bird or beneath the lower back, depending on the trussing pattern being used.
4. Capture the legs
Bring the twine around the drumstick ends or leg joints and cross it so the legs draw inward toward the cavity. The aim is firm control, not maximum compression.
5. Draw the bird into shape
Run the twine along the sides of the bird while maintaining light tension. Keep the breast skin smooth and make sure the wings remain tucked.
6. Tie securely
Finish with a secure knot at the neck or breast end, depending on the method. The bird should feel compact and stable when lifted, but the twine should not cut deeply into the flesh.
7. Roast and verify doneness
Cook using the chosen roasting method. For whole poultry, USDA FSIS guidance requires a safe minimum internal temperature of 74°C / 165°F. Check the innermost thigh and wing area and the thickest part of the breast with a food thermometer, avoiding bone.
Temperature and timing guidance
Trussing itself does not determine cooking time. Bird size, starting temperature, oven setting, airflow, stuffing, roasting vessel and whether the bird is brined all affect the cook. USDA notes that whole poultry should be roasted at an oven temperature no lower than 163°C / 325°F and cooked until all required measuring points reach 74°C / 165°F.

Use one approved trussing pattern for the team, pre-cut equal lengths of twine, assign a dedicated raw-poultry workstation, and keep finished birds on labelled trays under refrigeration until roasting. For high-volume preparation, do not over-tighten the birds simply to make them look identical. Excessive compression can tear skin, create deep string marks and make rapid, hygienic handling more difficult.

At home, a simple leg tie plus tucked wings is often enough. The goal is a stable bird and protected extremities, not a complicated restaurant knot. If speed and crisp surface area are more important than formal presentation, spatchcocking may be the better technique.

Leaving wing tips exposed

Using unsuitable string
