Zucchini is a type of summer squash, usually harvested while immature so the skin and seeds remain tender. Green, yellow, round, and striped cultivars behave similarly in most recipes.

Raw zucchini is crisp and mildly vegetal. Heat softens it quickly and releases substantial moisture. High heat encourages browning before the interior turns watery; low, crowded cooking can make it steam and become limp.

How to Choose and Store

Choose firm zucchini with smooth, taut skin and no deep cuts or soft spots. Smaller to medium specimens are generally more tender and less seedy. Refrigerate unwashed and dry, then use before the skin wrinkles or the flesh softens.

  • Failing to drain grated zucchini when moisture matters.
  • Overcooking until the flesh collapses completely.
