Miso
Miso is a fermented Japanese seasoning paste with salt, umami, sweetness, acidity, and complex grain-and-soy aromas. Its character ranges from delicate and sweet to dark, robust, and deeply savoury.
What Is Miso?
Miso is made by fermenting soybeans, salt, and koji—grain inoculated with Aspergillus oryzae. Rice, barley, soybean-only, and mixed styles differ by region, fermentation time, salt, and raw materials.
Common Styles
White or shiro miso is typically lighter, sweeter, and younger. Red or aka miso is generally darker, saltier, and more robust. Awase blends multiple misos for balance. Colour alone does not tell the entire flavour story, so taste the specific paste.
Storage
Keep miso refrigerated after opening and protect the surface from drying and contamination. Its salt and fermentation provide durability, but flavour, colour, and aroma continue to change over time. Use clean utensils.
Cooking with Miso
Dissolve miso in a little warm liquid before stirring it into soup for even distribution. Avoid unnecessarily aggressive boiling when you want delicate fermented aromas. Use miso in marinades, glazes, dressings, sauces, butter mixtures, noodles, vegetables, fish, and soups.
Pairings and Substitutions
Miso pairs with dashi, soy sauce, sesame, ginger, scallion, mushrooms, tofu, eggplant, salmon, butter, honey, and citrus. Soy sauce can replace some salt and umami but lacks paste texture and fermentation profile. Doenjang offers related fermented soybean depth but is distinct.
Common Mistakes
- Using the same amount of every miso style.
- Adding salt before accounting for miso.
- Boiling delicate miso soup aggressively for long periods.
- Letting the paste dry out uncovered.

Miso is both salt and fermentation. Add it gradually, then reassess the entire seasoning of the dish rather than treating it as an extra flavour spooned on top of already-salted food.
