Temperature Control
Set and monitor the unit according to the food-safety requirements for the stored products. Use an independent verification method as required by the kitchen’s monitoring system rather than relying only on the control-panel display. Record temperatures according to site procedure.
Loading and Airflow
Cold air must circulate around stored food. Do not block internal vents or pack containers so tightly that airflow collapses. Avoid loading hot food unless the equipment is specifically designed for that purpose; use the approved cooling process before refrigerated storage.
