Meat Slicer
A commercial meat slicer uses a rotating circular blade and sliding carriage to produce repeatable slices of suitable cooked meats, charcuterie, cheese, and other firm foods.
Best Uses
Deli meats, cooked roasts, ham, terrines, selected cheeses, and high-volume cold-cut preparation.
What to Look For
- Stable construction and reliable thickness adjustment.
- Effective blade guards and product pusher.
- Components designed for thorough sanitation.
- Capacity appropriate to the diameter of products handled.
Safe Use
Use the product holder and guards as designed, keep hands away from the blade path, set thickness to zero when not actively slicing, and disconnect power before cleaning or servicing according to workplace procedures.
Cleaning & Sanitation
Slicers contact ready-to-eat food and require disciplined cleaning and sanitising, including hidden food-contact areas identified by the manufacturer and food-safety program.
Common Mistakes
- Holding food by hand near the rotating blade.
- Leaving residue around the blade hub or carriage.
- Cleaning while the machine remains energised.
