How the System Works

A preparation that appears frozen on the surface may not have reached the required condition through its full depth. Standardising beaker size, fill weight, freezer location, and freeze time improves consistency.
Processing for Service
Keep the beaker exterior and machine contact surfaces clean. Fit the approved blade and protective components correctly, select the required processing quantity, and allow the programmed cycle to finish. After processing, assess texture immediately; repeated processing can change aeration, temperature, and body, so it should be a deliberate recipe decision rather than an automatic correction.
Sanitation
Blade assemblies, protective guards, beakers, lids, and any components that contact food must be cleaned and sanitised according to the manufacturer’s procedure. Allergen control is particularly important because the same machine may process dairy, nuts, seafood, herbs, fruit, and savoury preparations. Use the kitchen’s documented allergen-cleaning procedure between incompatible products.
Safety
Never bypass interlocks, use damaged containers, substitute unapproved components, or reach into the processing area. High-speed blades and frozen product create substantial mechanical forces. Inspection, assembly, operation, cleaning, and maintenance should follow the manufacturer’s instructions and the kitchen’s equipment-safety procedure.
