High-Shear Homogenizer
A high-shear homogenizer uses a rapidly rotating rotor-stator system to reduce particle size, disperse powders, and create fine, stable emulsions and suspensions.
Best Uses
Mayonnaise, dressings, emulsified sauces, purées, hydrocolloid dispersions, beverage bases, and fine culinary suspensions.
What to Look For
- Variable speed control.
- Food-safe rotor-stator head.
- Capacity matched to batch volume.
- Easy disassembly for cleaning.
Correct Use
Submerge the head fully, begin at lower speed, add powders gradually, and avoid unnecessary aeration when a dense smooth texture is desired.
Common Mistakes
- Running the head partly above the liquid and pulling in air.
- Using too small a batch for the head size.
- Over-processing heat-sensitive mixtures.
Chef’s Notes
High shear is especially useful when a standard blender cannot disperse fine powders or create the desired emulsion stability.
