Dough Sheeter
A dough sheeter passes dough between adjustable rollers to reduce it evenly to a controlled thickness for pastry and high-volume baking production.
Best Uses
Croissant dough, puff pastry, Danish pastry, pie dough, tart dough, pizza dough, crackers, and other products requiring uniform thickness.
What to Look For
- Smooth and precise roller adjustment.
- Belt width suitable for the largest dough pieces.
- Reversible operation for repeated passes.
- Guards and emergency stops that are easy to access.
Correct Use
Flatten dough before the first pass, reduce thickness gradually, keep the dough lightly dusted rather than heavily floured, and maintain cool dough when working with laminated products.
Common Mistakes
- Reducing thickness too aggressively in one pass.
- Allowing butter layers to soften during lamination.
- Using excess flour that toughens or dries the dough.
Chef’s Notes
A sheeter improves repeatability, but the dough must still be properly rested and conditioned. Mechanical rolling cannot compensate for tight, warm, or poorly laminated dough.
