Dosa Tawa
A dosa tawa is a broad flat griddle, traditionally cast iron or heavy steel, designed to spread fermented batter thinly and cook it quickly into crisp dosas.
Best Uses
Dosa, uttapam, pesarattu, flatbreads, and selected griddle-cooked Indian breakfast items.
What to Look For
- Heavy heat-retentive surface.
- Large uninterrupted cooking area.
- Even heating with minimal hot spots.
- Surface compatible with repeated seasoning and scraping.
Correct Use
Preheat evenly, regulate surface temperature, spread batter in a controlled spiral, and use only enough fat for the intended texture.
Common Mistakes
- Cooking on an overheated surface that sets batter before spreading.
- Poor seasoning that causes sticking.
- Leaving burnt batter residue between batches.
Chef’s Notes
A dosa tawa needs a stable middle heat: hot enough for browning but cool enough to allow thin spreading before the batter sets.
