Deck Oven: Stable Radiant Heat for Bread, Pastry, and Artisan Baking

EQUIPMENT KNOWLEDGE · PROFESSIONAL KITCHEN EQUIPMENT

Deck Oven

A deck oven uses independently heated baking chambers and solid deck surfaces to deliver strong bottom heat and stable radiant cooking for bread, pastry, and selected roasted foods.

Best Uses

Artisan breads, baguettes, rolls, pastries, flatbreads, pizzas, and products that benefit from strong conductive bottom heat.

What to Look For

  • Independent top and bottom heat controls.
  • Steam capability for bread production.
  • Deck material with strong heat retention.
  • Chamber height suited to the intended products.

Correct Use

Preheat long enough for the deck to saturate with heat, load efficiently, and manage top and bottom heat separately according to product thickness and colour.

Common Mistakes

  • Loading before the deck is fully heated.
  • Using excessive bottom heat on delicate pastries.
  • Opening the chamber repeatedly during baking.

Chef’s Notes

Deck ovens reward consistency. Once the chamber is heat-saturated, they provide excellent crust development and repeatable bake profiles.
