Convection Oven
A convection oven uses a fan to circulate heated air, increasing heat transfer and promoting more even browning across multiple trays than a still-air oven can often achieve.
Best Uses
Roasting, cookies, pastries, vegetables, sheet-pan production, proteins, and many high-volume baking tasks.
What to Look For
- Even airflow and reliable temperature control.
- Capacity compatible with standard trays.
- Adjustable fan settings where delicate products require them.
- Accessible cleaning and service components.
Correct Use
Preheat fully and avoid blocking airflow with overloaded racks. Recipes developed for conventional ovens may need temperature, time, or fan adjustments.
Common Mistakes
- Packing trays so tightly that air cannot circulate.
- Assuming the displayed temperature equals actual cavity temperature everywhere.
- Using strong fan speed on delicate products that can distort.
Chef’s Notes
Convection is an airflow system. Tray spacing and loading pattern are as important as the temperature setting.
