Correct Use
Preheat the chamber, use clean-burning smoke, avoid overloading racks, monitor internal food temperature, and allow enough airflow for combustion and even cooking.
Common Mistakes
- Producing heavy dirty smoke that makes food bitter.
- Opening the chamber repeatedly and losing heat.
- Relying on cooking time instead of internal temperature and tenderness.
