A commercial pasta cooker is a high-capacity boiling-water appliance with baskets that allow multiple pasta portions to cook and drain quickly during service. Its main advantage over an ordinary stockpot is recovery, organisation, and repeatable basket handling.
Tank and Recovery
The heating system should return the water toward the working boil after cold or room-temperature pasta is added. Capacity is not only litres of water; it also includes burner or element power and the number of portions the unit can recover from during a busy pickup.
Baskets
Individual baskets keep portions separate and make timing easier. Do not overfill them, because crowded pasta sticks and reduces water movement. Match basket size to the portion and pasta shape, and keep handles positioned so cooks can work without crossing over boiling water.
Water and Salt
Use potable water and a salinity appropriate to the recipe and operation. Salt concentration can rise as water evaporates and starch accumulates, so refresh or replace water according to product quality and the site procedure rather than topping up indefinitely.
Service Workflow
- Bring the tank to the required working condition before service.
- Portion pasta into baskets consistently.
- Start a timer or use the station’s defined timing system.
- Agitate briefly when required to prevent sticking.
- Lift and drain safely.
- Finish pasta immediately in sauce or the next recipe stage.
Starch Management
Repeated cooking increases starch concentration, foam, and cloudiness. Some starch is useful in pasta water for finishing sauces, but excessively dirty water affects flavour, foaming, and equipment cleanliness. Use fresh water as needed for the service volume and product standard.
Burn Safety
Boiling water and steam can cause severe burns. Load baskets carefully, avoid dropping wet frozen product into the tank, keep handles secure, and drain baskets without swinging them across other staff. Use the manufacturer’s drain procedure at shutdown.
Cleaning and Descaling
Drain only when safe, remove starch residue, and clean the tank, baskets, overflow areas, and drain system. Hard-water scale reduces heat transfer and can damage components, so descale at the manufacturer-recommended interval using approved chemicals.
Common Mistakes
- Overfilling baskets.
- Loading too many portions at once and collapsing recovery.
- Using the same water long after it becomes excessively starchy.
- Swinging dripping baskets across a busy line.
- Ignoring mineral scale on heating surfaces.
Chef’s Note
During service, protect recovery. Four correctly sized baskets that stay at a strong boil will usually give you better pasta than loading every basket because the tickets arrived together.
